The extra virgin olive oil from Pago de Espejo is an early harvest oil , harvested at the beginning of November, when the olive is in veraison (optimal state of maturation, in which the olive has a lower yield, but a higher quality) . In addition, the oil is produced by mechanical processes, and cold extraction , leaving aside the typical chemical processes of refined oils and olive oils without more. It is ground in the hours after its harvest, resulting in an excellent gourmet extra virgin olive oil, with an intense fruity aroma and a very balanced, slightly spicy aftertaste, typical of the Picual variety.
