Description
Combava is a citrus variety from the rutaceae family. The name Combava comes from the name of the island from which it originates: an Indonesian island east of Bali.
The fruit grows on a small, thorny tree. It is reminiscent of lime or bergamot but has a characteristic lumpy rind.
The fruit and the leaf are rich in a strongly scented essential oil, with a scent reminiscent of lemongrass. The fruits are harvested at maturity mainly in January-February.
Usage :
Combava and its essential oil are used in cooking as a condiment, in the preparation of drinks. Both the leaves and the zest are used in the kitchen. They are commonly used in Reunionese, Malagasy and Asian Creole cuisine.
Combava powder can be used to flavor dishes in sauce: based on coconut, fresh cream or soy. It will also flavor white meats, fish but also tomatoes in salads. Its pronounced and tangy taste will also sublimate your chocolate desserts or fruit salad. Use sparingly.
Conservation :
Combava powder can be stored in an airtight jar, in a dry place away from light.
Virtues :
In traditional Asian medicine, Combava extracts are used in case of lung disease and stomach aches. The essential oil is used to relieve depression and stress. It would also have an antioxidant, antidiabetic and hepatoprotective capacity.

After drying, the dried zest are ground to obtain powder. Combava plants are grown on an organic certified agricultural site.
