Description
The bunches are harvested at maturity when a few berries are yellow-orange in color mainly in January – February. The berries turn black when ripe, fermented and dried. The peppercorns are black, full and wrinkled on their surface. It is a fragrant and pungent pepper. The flavor of pepper is due in particular to piperine, which causes a sensation of heat when consuming pepper.
