Onion Salt  This ingredient can be used as a table condiment or a cooking spice. .Turmeric, a powerful spice originally from India, and has been used for over 5,000 years, mainly for its culinary uses but increasingly for its Ayurvedic properties. One of these key properties is a lovely little compound called Curcumin!   Many studies have been published confirming its benefits resulting in a huge increase worldwide in the uptake of regular doses of Turmeric to maintain a healthy body.  What may not be widely understood is that Curcumin isn't absorbed very easily by our bodies as it metabolises very quickly in the liver. Thankfully mother nature has a way around this and it's simple - add Black Pepper!  Black pepper is packed full of vital nutrients and has many health benefits in its own right, but when combined with Turmeric, it's the compound Piperine that helps slow down the liver's metabolising process.

Green Peppercorns  Cracked &amp; whole, green peppercorns are the unripe dupes of the pepper plant. They're freeze-dried in order to maintain their bright fresh color and flavor.  Green peppercorns have their own distinctive taste which is quite different from black peppercorns giving it a fresh more herby taste.

Fenugreek  Fenugreek has a robust curry-like flavor, making it a key ingredient in curry powder.   The seeds are commonly used in pickles, curry powders, and pastes. This spice is often found in Indian food where the seeds are used as a seasoning for many dishes or in a powdered form to mix with rice.

Garam Masala  This easy-to-make spice blend is the heart of most Indian dishes. Made from a combination of different spices, it probably has as many recipes as there are families in India! Cinnamon Sticks  Cassia Cinnamon is from the Cinnamon Family and is commonly used in Sri Lankan and Burmese cooking.  Cassia is commonly ground with cinnamon to make the modern massed produced powder you find in everyday pre-prepared food. Black pepper adds a flavor of its own to dishes, as well as enhances the taste of other ingredients.   It stimulates the appetite and gives food a gentle warmth, as well as enhancing the taste of other ingredients.  A spice indigenous to southern India, the majority of pepper now comes from Vietnam, the biggest exporter.  Pepper comes from a climbing vine, the fruits of which - small round berries - ripen from green to red and finally to brown. Peppercorns are actually berries that are picked when they're just turning red. They are then dried whole before being sold.  Peppercorns can be green, white, or black, depending on when they are harvested. Pink peppercorns, however, are not true pepper.  Beauty tip. Serves 5 People  Ingredients:  170g Chorizo, cut into chunky slices  110g Pancetta or Smoked Bacon, diced  2 fat garlic cloves, minced  1 large Spanish onion, finely diced  1 red pepper, diced  2 Tbsp of Nature Kitchen Paella Spice  500g Arborio rice  1 glass of dry white wine  1Ltr strong chicken/vegetable stock  1 pinch Saffron  5 chicken thighs, de-boned, chopped in half and browned  15 small clams, cleaned   100g fresh/frozen peas  3 large tomatoes, de-seeded and diced  125ml extra virgin olive oil  5 whole fat garlic cloves, peeled  10 jumbo raw prawns, in shells  300g squid, cleaned and chopped into bite-sized pieces  Sea salt &amp; freshly ground black pepper  Directions  Before you start, open your Paella Spice and remove the Bay leaves and Saffron from the top, you will need these a bit later.

Marjoram   Has many varied culinary uses. They can be added to salads or chopped up and used to accompany cold meat and even egg dishes. Marjoram is often used in poultry stuffing and soups. Its aromatic flavour works well with roast meats and liver.   A sprinkle of marjoram will liven up a Spaghetti Bolognaise, or why not try making your own beef burgers and adding marjoram to compliment their flavour?  As with many dried herbs, when adding marjoram to stews and soups, add it near the end of the cooking period to ensure the best possible flavour.

Nutmeg  Nutmeg adds a distinctive flavor to puddings, bread, and savory dishes.  Best sprinkled on puddings to enhance the flavor of desserts.  Added to low slow-cooked curries gives a deeply rich flavor  Adding to rice gives the impression of sweetening rice

Mild Madras  This is a perfect curry flavoring for those who do not appreciate hot spices but find medium curries too mild. Thyme Herb  Thyme is often used to flavor meats, soups, and stews and is used as a primary flavor with lamb, tomatoes, and eggs. Thyme, while flavourful, does not overpower and blends well with other herbs and spices.  This herb is a basic ingredient in Lebanese, Syrian, Jordanian, Palestinian, Libyan, Indian, Italian, French, Albanian, Persian, Portuguese, Assyrian, Spanish, Greek, Nigerian, Caribbean, and Turkish cuisines.

Dill Tips  This gentle herb is the secret ingredient to Gripe water, its health benefits for digestion date back thousands of years. A good herb on fish, potato, and steamed vegetables.   A perfect herbal Tea and lovely in biscuits and pastries

Add it to the traditional roast spud or oven chip and you will be surprised at the effect. Harissa Spice Blend  A real Moroccan treat! So versatile with its hot, but fresh chilli and mint flavor. It's excellent as a rub on a lamb. If you are looking for Harissa paste, then look no further. Simply add oil to achieve the desired consistency. The great thing about having a powder to make the paste is you can make as little or as much as you need. Also, the dry spice will keep for much longer than the ready-made pastes. Try as a rub on meats, add to cous cous or pasta, use to stir fry some veg; it's great in soups and stews; add to cold meats with a little oil for a great sandwich; it's great on roasted spuds and it also will make a great dip if you put it in Greek yogurt.

Herbs de Provence,   Provencal herbs are a traditional blend of aromatic herbs, that flourish in the hills of Southern France during the hot summer months. Used by the handful when fresh, Herbs de Provence is also good when dried.  Ingredients: Bay leaves, Thyme, Fennel, Rosemary, Chervil, Oregano, Savory, Tarrogan, Mint, and Marjoram.

Baked Jamaican Chicken Recipe  Take 4 chicken quarters and place them in a bag with diced pineapple and a tablespoon of Jammin Jamaican spice blend. Shake it up and leave for at least four hours.   Preheat the oven to gas mark 6 or the equivalent in electric.  Place in a casserole dish and bake in the oven for 30mins covering in foil so as not to lose the juices  Accompany by coconut, lemon rice, and peas  Boil rice in half Coconut milk and half water. When tender strain and stir in a cup full of peas. Add salt, pepper, and fresh lemon zest. Blend together and cover keep warm until chicken is ready to remove from the oven.   Serve rice on a bed of fresh spinach, place the chicken on the rice, and drizzle pineapple pieces and juice over it.
