Truffle - no truffle pigs
One of the most expensive foods in the world. And although truffles are mainly used in ´haute cuisine´ nowadays, this has not always been the case. Because of its occurrence in forest areas, the truffle had its place mainly in rural cuisine for centuries. However, excessive harvesting of the noble mushroom shifted supply and demand. And thus also the price. For example, while France was still able to export around 1.5 million kg of truffles per year at the end of the 19th century, it was only 50,000 kg at the end of the 20th century. Incidentally, the noble tubers are not found by so-called truffle pigs, because they would eat them directly. Nowadays, special dogs are used in the search to spare the tubers.
