Tasting Notes: Dates, Caramel, Nuts Sweet notes of dates and nutty caramel delicately balanced with sea salt and rich organic coffee. Finca Elvesia is a cacao plantation located in the northeastern part of the Dominican Republic where cacao plantations were first established. The plantation was founded at the end of the 19th century by Swiss immigrants in partnership with famous Swiss chocolatier Philippe Suchard. It became the largest cocoa plantation in the Caribbean, even having its own railroad for transportation of the cocoa to the port for export to Europe. The farm has approximately 200 hectares of cacao with special flavour and aroma characteristics inherited from over a 125 years of careful selection. After harvesting, the beans are then dried in solar driers for approximately seven to ten days.
