In 2019 Chantal Coady OBE – sustainable chocolate expert, founder of Rococo Chocolates and long-term friend of Fortnum’s – shared the exceptional work of The Grenada Chocolate Company, based on the Caribbean island of Grenada, with us. Dirty Cow was founded by two friends looking to bring some excitement and fun to dairy free chocolate. Eonce chocolate is a small ‘bean-to-bar’ chocolate factory based in East London, founded by Julia Martin & Jose Jara . Our focus is on making simple and delicious chocolate, ethically sourced and without additives. We begin by selecting the best quality cocoa beans, working as directly as possible with the farmers. we hand-sort every bean received, ensuring high quality standards are met in every single bar. The cacao is lightly roasted, then the shells are removed from the nibs in small batches. The nibs are slowly refined under a granite stone wheel for nearly three days while we slowly incorporate the other ingredients.
